Vanilla Sponge Cake

Ingredients-

  • 200 gms plain flour

  • 200 gms castor sugar

  • 200 gms white butter

  • 4 Eggs

  • 1 tsp baking powder

  • 1 tsp vanilla essence


For the Glace icing

  • 150 gms icing sugar

  • 1 tsp butter

  • 2 tsp (approximate) water Few drops orange color

Method-

To bake the sponge

1. Sift together the flour and baking powder.


2. Beat the butter, essence, and sugar until light and creamy. Add the eggs 1 at a time and beat well, after each addition. Fold in the flour mixture mix gently.


3. Preheat the microwave on "Convection at 180°C.


4. Line a 2-liter cake tin with butter paper pour in the butter and bake at 180°C for 25-30 mins.

5. Allow to stand for 10 min inside the oven before inverting onto a wire rack to cool. Cool completely before icing.


To make the Glace Icing

1. Sift the icing sugar into a 1 lit, dish stir in butter and enough water to make a stiff paste.


2. Microwave at 100% power for 20 secs. until just warm and running. Do not overheat or the icing will crystallize. Stir 2-3 times during heating. Add a few drops of orange color.


3. Pour the icing over the cake and spread evenly using a spatula. Allow the icing to set for a few min before decorating.

Let's remember this -

Eggs at room temperature – these will cushion better and quicker. It's not difficult to heat up refrigerator cold eggs – simply leave them in warm water for 5 minutes.


De-chill frigid virus blending bowls – Cold kitchen? Cold dishes! Run them under warm regular water then, at that point, dry prior to utilizing. Not hot regular water – simply warm. Why? Eggs circulate air through quicker and better when somewhat warm. Cold bowl will bring down the temperature of eggs. This is an overall valuable baking tip – eg relaxed spread creamed in a frosty virus bowl will make it firm up.


Ensure your baking powder is still great – however, your cupcakes don't rise, the offender is likely your baking powder. Regardless of whether it's not past the expiry date, if not put away in a cool dry spot, or then again if "somebody" left the top off for a really long time, it can lose rising power


When you start, don't stop – when you begin beating the eggs, continue to go until the cake is in the broiler. Don't anytime pause and accept a call from your effusive Aunt! :P

Frosting Idea - VANILLA BUTTERCREAM

  • Beat butter with the whisk attachment in stand mixer for 1 minute until creamy. Add icing sugar / powdered sugar in 3 lots, beating slowly (to avoid a powder storm) then once mostly incorporated, beat on high for a full 3 minutes until fluffy.

  • Add vanilla and milk, then beat for a further 30 seconds. Use milk to make it lovely and soft but still holds it's form (eg for piping). Use immediately. (If you make ahead, refrigerate then beat to re-fluff).

  • Add some, sprinklers to make the sponge cake more colorful.
