Healthy NACHOS with SALSA

Ingredients -

  • 1 cup wheat flour

  • 1 tbsp cornflour

  • Pinch baking powder

  • Pinch of turmeric (haldi)

  • ½ tbsp oil

  • 1 tsp garlic paste

  • Salt

  • ½ tsp oregano

  • ½ tsp red chili flakes


TOPPINGS

  • 2 tbsp butter

  • 1 tsp chopped garlic

  • 1 tbsp chopped celery

  • 1 onion-chopped

  • ½ capsicum - chopped 4 tbsp tomato puree

  • 1 tomato - deseeded and chopped

  • 4 tbsp com or boiled beans

  • 1 tsp tomato ketchup

  • 2 tbsp cream

  • Salt, red chili flakes and oregano to taste


ADD LAST

  • ½ cup grated pizza cheese

  • sliced black or green olives

Method -

1. Mix all ingredients of nachos together. Knead to a dough with about ¼ cup warm water. Knead well till smooth and cover and keep aside for 30 minutes.


2. After 30 minutes, knead the dough again. Make 4 balls. Roll a ball thinly into a big round like a chappati. Prick the chappati with a fork all over so that they do not puff on frying.


5. For the topping, heat butter. Add celery and stir for a minute. Add to puree and stir for 2 minutes separates. Add ketchup, cream capsicum, tomato, onion and com salt, red chili flakes and oregano taste. Keep aside till serving side


6. To serve, arrange fried nachos a single layer on an oven-proof platter the iron plate of a sizzler plate. Sprinkle some cheese. Top each nachos with a tsp of tomato-corn mixture in the center spread lightly, leaving edge clean. Sprinkle some cheese again top with olives.


7. Put the nachos platter in the oven for 5 minutes for the cheese to melt.


Authentic Nachos(cornmeal chips) is served with salsa, guacamole, veggies, cheese, sour cream and beans. Here, what we did is picked our favorite ingredients from our kitchen and tried our jusrandomly styles Nachos.


Instant Fresh Salsa

  • 2-3 Tbsp Tomato Ketchup (optional for extra zingy taste)

  • 1-2 Tsp Chili Sauce

  • 1-2 Finely Chopped Tomato

  • 1 Finely Chopped Onion

  • 1 Finely Chopped Green Chili

  • 1/4 Tsp Chili powder

  • 1/4 Tsp Lemon Juice

  • 1 Tsp Sugar

  • Fresh finely chopped Coriander

  • Salt

Cheese Sauce

  • 1 Tbsp Butter

  • 1 Tbsp Flour

  • 1/2 Milk

  • Salt

  • 4-5 Tbsp Processed Cheese

To begin with, the recipe first let's make the salsa -

1. In a bowl add the chopped tomatoes, onion, green chili, chili powder, sugar, Chili sauce, lemon juice, coriander leaves and salt to taste. Mix them well and keep them aside, until all flavors combine together.

2. In a bowl add tomato ketchup, chili sauce, tomatoes, onion and mix them together, your instant salsa is ready.


Cheese Sauce

1. In a preheated pan add butter and flour and mix them well(see to it that you don't burn them)

2. In the mix now slowly add milk and mix them well, ensure that there are no lumps formed.

3. Once the mixture starts to thicken, gradually add the grated processed cheese. Voila! Cheese Sauce is ready.


Let's remember this -

  • There are various ways to assemble the Nachos, you can even layer it with cheese, nachos, veggies and repeat or just a single layer.

  • You can use gluten-free chips too.

  • Instead of baking, you can add cheese sauce/Grated Cheese/Mayo and just serve it. (Please ensure you do not drizzle hot cheese sauce, as chips may turn soggy)

  • Consume the Loaded Cheesy Veggie Nachos as soon as possible as chips may turn soggy.
